Fricco (cheese) with potatoes

Preparation
This Fricco is easy to digest; if you prefer a stronger taste, it is recommended to add a soffritto made of onions and some smoked ham.
Steam the potatoes, peel and mash them, add salt and pepper.
Mix the finely cut or whisked cheese with the already cold potatoes, adding salt and pepper.
Mix well, put the pastery in a heated pan and fry over a high flame; once a strong, golden crust is formed, turn the fricco in order to form a golden crust on the other side.
To be served immediately. Polenta and Tocai goe well with this dish.
